Good morning … muffin in a cup anyone?

My pilates teacher and friend shared this recipe with me about a year ago. I’m not sure of the origin…but thank you! It is so simple, filling and healthy, I could not resist sharing it here.



Into a medium size coffee mug stir

  • 1/4 cup ground flaxseed
  • 1 tsp baking powder
  • 2 tsp ground cinnamon


  • 1 tsp coconut oil
  • 1 egg
  • 1 tsp of honey, agave syrup or maple syrup

Stir the entire mixture with a fork until completely blended, making sure to scrap the sides and bottom.  Microwave on high for one minute.

Variations and additions:

As always, I deviate from the recipe by adding or substituting some of the ingredients listed below:

  • 1 tbsp hemp hearts
  • 1 chopped  fresh fig or date
  • walnut oil
  • 2 tbsp chopped nuts
  • 1 tbsp coconut flakes


Are you WOWED?

I certainly was the first time I gently tapped my muffin out of my mug. As you can see, I like to add a tiny bit of butter….or jam, or almond butter or cheese.

Love the ingredients…sounds wonderfully healthy. Though I know that coconut oil should never be microwaved (there is much controversy on microwaving food in general). Even though it would take a little longer to bake…I think popping it in a the oven or toaster oven would do the trick. Thanks for sharing :)
